No sugar blueberry muffins

 Ingredients

  • 2 cups almond meal

  • ½ cup buckwheat flour

  • ½ cup monk fruit sweetener or stevia

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • ½ tsp sea salt

  • 3 free range eggs

  • 100 ml coconut milk

  • 3 tbps coconut oil melted

  • 1 cup frozen berries

     

    Method

    Combine all dry ingredients in a large bowl.

    Whisk eggs, coconut milk and melted coconut oil, then add to dry ingredients.

    Mix together.

    Add berries and fold in without over mixing. The muffins will be blue if you mix too much.

    Fill greased muffin trays with mixture about ¾ full.

    Bake for 30 mins on 170 C until light golden colour.
