Chocolatey Beet and Sweet potato muffins
Chocolate muffins that are nutritious sounds too good to be true!. These are both delicious and nutritious and a great way to trick the kids into eating some extra veggies!
Makes 12
Ingredients
1 cup coconut flour
1 cup almond meal
2 tbsp cacao
2 tsp bicarbonate soda powder
1 teaspoon cinnamon
1tsp pink rock salt
½ cup rice malt syrup
1 free range egg
½ cup water
1tbsp apple cider vinegar
1 tsp vanilla essence
¼ cup coconut oil
1 cup mejool dates, pitted and soaked in hot water 5 mins
½ cup grated beets
½ cup sweet potato
Method
Preheat oven to 180 and grease a 12 muffin tin.
Add dates, flour, almond meal, coconut oil to a food processor and blitz for a few minutes.
Add the veggies and process well.
Add bicarbonate soda, salt, cinnamon, apple cider vinegar, rice malt syrup, egg, water, and vanilla.
Mix batter together well.
Pour in to muffin tin
Bake for about 30 minutes, until the top is darkened slightly and a toothpick, inserted into the centre comes out clean.
