Beef salad.

 

Lean piece of beef sliced into strips (preferably grass fed beef from butcher)

2 carrots diced

Handful of snow peas

Broccolini or broccoli

Green capsicum

Tablespoon fish sauce

2 tablespoons soy sauce

Chopped lemongrass

Chopped coriander

Squeezed lime

Handful of spinach leaves

Cucumber sliced

Tomato cubed

 

Add sliced onion and crushed garlic to a pan with a teaspoon of coconut oil. Stir-fry until golden. Add beef strips and stir-fry until brown. Add carrots, snow peas and broccolini and stir-fry until slightly soft. Add capsicum and sauces and continue to stir fry for around 2 mins. Add lime, coriander and lemongrass.  In a bowl add some spinach leaves, some tomatoes, some cucumber and add the beef and vegetables. Mix and serve.
