Cauliflower rice
1 head of cauliflower roughly chopped or blitzed in food processor (you can buy bags in most supermarkets now if you don’t feel like the chopping or processing.
Some chopped and grated veggies (snow peas, grated carrot, broccolini, onion)
Some coriander
Some bean shoots
Soy sauce or fish sauce
Add around a teaspoon of coconut oil to fry pan and heat.
Method
Add onion, carrots, snow peas, broccolini to pan and stir fry until soft. Add cauliflower and continue to stir. Add bean shoots and sauce (I always just splash rather than use a specific amount but I would say around a tablespoon- just go to taste). When hot serve instead of rice.
