Low carb mac and cheese
Ingredients
1 small cauliflower, trimmed and cut into small florets
2 tbsp olive oil
pink rock salt
2 tsp fresh chives, chopped
1 tbsp butter
2 garlic cloves, crushed
1 cups shredded mozzarella cheese, divided
1 cups finely grated parmesan cheese, divided
1 cup shredded cheddar cheese
75 g cream cheese, softened
1 cup of heavy cream
110 g bacon (preferably free range), cooked crisp and shredded
Methods
Preheat oven to 375° . Line and grease a baking dish. In a large bowl, toss cauliflower with 2 tablespoons oil and season with salt. Spread cauliflower onto two large baking sheets and roast until tender and lightly golden, about 40 minutes.
Meanwhile, in a large pot over medium heat, heat cream. Bring up to a simmer, then decrease heat to low and stir in cheeses until melted. Remove from heat, add crushed garlic. Season with salt and pepper (if desired), then fold in roasted cauliflower. Taste and season more if needed.
Transfer mixture into prepared baking dish. In a medium bowl stir to combine bacon, parmesan, and oil. Sprinkle mixture in an even layer over cauliflower and cheese.
Bake until golden, 15 minutes. If desired, turn oven to grill to brown topping further, about 2 minutes.
Garnish with chives before serving.
