Blueberry and apple muffins
Makes about 12
Ingredients
3 apples, peeled and chopped
½ cup rice malt syrup
½ cup coconut oil
3 eggs
2 cups almond meal
1 cup oats
1 tsp baking powder
1 tbsp vanilla essence
1 tsp cinnamon powder
1.5 cups frozen blueberries
Method
Preheat the oven to 180C and grease a 12 muffin tray
Put apples, coconut oil, maple syrup and eggs into a food processor and blitz.
Add the oats, vanilla extract, almond meal, cinnamon, and baking powder and mix well.
Stir in the blueberries by hand and then spoon mixture into the muffin tray.
Bake for 15-20 mins until golden. Give them some time before eating; the blueberries take a while to cool.
