Breakfast bars

 

Breakfast Bites (Makes 8 bars)

I really love these breakfast bites and they don’t always have to be for breakfast as they make a great afternoon snack as well. They are packed to the brim with nutrients and omega 3 fatty acids. Even my mum likes them - and she keeps telling me that she doesn’t like food that is too healthy!

Ingredients

1 cup pumpkin seeds

½ cup flaxseeds

½ cup chia seeds

1 cup almond meal

¼ cup walnuts

5 medjool dates, soaked in hot water for 5 minutes

¼ cup goji berries

3 tbsp coconut oil

2 tbsp rice malt syrup

Pinch of pink rock salt

Method

Whizz ingredients until well combined and sticking together. Shape into bars and pop on a lined baking tray. Press down slightly to flatten. Bake at 175C for 10–15 minutes until lightly golden.
