Salad Jar

This is just an idea for a salad jar- but can be adapted to include your fav vegetables and protein source.

Ingredients

  • Handful leafy greens

  • 2 Sliced spring onions

  • 1 medium carrot

  • 1 avocado

  • 1/2 small red capsicum (bell peppers) sliced

  • 4 cherry tomatoes sliced

  • 110 g smoked salmon or rotisserie chicken

  • 60 ml mayonnaise homemade (see recipe)

Method

Grate or chop the vegetables.

First, put the dark leafy greens at the bottom of the jar.

Add spring onion, carrot, avocado, capsicum (bell peppers) and tomato in layers.

Top with smoked salmon or grilled chicken.

Add mayo right before serving.
